DACA-Have Your Voice Heard

Attorney Generals from the following states signed and sent a letter threatening to sue if the Deferred Action for Childhood Arrival (DACA) was not dismantled by the Federal Government: Texas, Alabama, Arkansas, Kansas, Louisiana, Nebraska, South Carolina, Tennessee, West Virginia, and Idaho (Idaho’s Governor also signed it.) That could have resulted in an immediate end to the program making people currently working and going to school under work permits they paid for and renew every 2 years, invalid.

I am loving teaching at 6:15am on Mondays! It makes me feel like I am starting the week strong and focused! I love the dedication of the ladies that get up early, before their kids, spouses, jobs, life to make their health and fitness a priority.  Taking the time to get stronger mentally and physically to give their best to the things they love.

I captured this picture of my son Andy on our drive home camping in Mt. Lemmon, we pulled off at a Vista Point and he climbed this beautiful rock formation. It made me think of a positivity band I wear, given to me my a friend I really admire, Let Your Light Shine. Despite the fog surrounding us, my son used his strength to see vast view below us from a different perspective. Always be you, Always let your light shine.

4th of July Workout!!

Perform each exercise in order for 20 reps, Repeat for a total of 3 rounds.

Star Plank- Come into full plank, reach opposite arm and opposite leg, alternating for a total of 20 (10 each side) keeping hips square to floor.

Firework Lunge- Step back into a lunge, then bring knee straight up towards chest (balancing on one foot) reach arms straight up towards ceiling. 10 on one side, then switch.

Star Spangled Abs- Come into a full plank, bring knee out side and towards shoulder, opposites knee, then 2 plank jacks. That is one rep.

Red White and Burpee- From standing, place hands on floor, step or jump back to plank, do one push-up, jump feet into low squat, return to standing. That is one rep.

Squats and Stripes- Step right foot out to side, bring arms to a T, return to center. Do 10 reps and switch to left side.

Tricep Bursts- Using a chair or bench, place hands on seat, fingers facing towards body, glutes in front of the seat, bend elbows to come into a tricep dip and add right knee coming toward chest as you dip. Do 10 reps and switch to left side.

Glute Explosion- Squat, dropping glutes low and chest staying up, return to standing and add a star jump (legs and arms come into an X as you jump). That is one rep, repeat for 20.

Coconut Mexican Hot Chocolate Ice Cream Tacos

My house we love all things tacos. When a recipe for ice cream tacos came up on my newsfeed I knew there was a way to make a healthier version. This ice cream has a deep rich flavor from the coconut cream and the cacao. The waffles are fluffy and the cinnamon/coconut sugar blend gives a great pop that really compliments the ice cream.

 

 

Coconut Mexican Hot Chocolate Ice Cream20170629_151851

1 Can Coconut Cream, chilled

1 Frozen Banana

2 TBS Cacao Powder

1/4 Cup Cacao Nibs

1/4 Cup Raw Honey

1/4 Cup Coconut Sugar

1 Tsp Cinnamon

1/2 Tsp Cayenne Pepper

Pinch of Salt

Take the hard coconut cream from the can and add to a food processor or blender. (Leave the liquid in the can). Add the rest of the ingredients and blend on medium speed. (stopping to scrap down the sides a couple times.) Place in a glass dish, cover with plastic wrap and freeze.

1/2 Cup Almond Flour

1/2 Cup Tapioca Flour

1 Tsp Baking Powder

Pinch of salt

Mix all the dry ingredients together

2 eggs (or flax eggs to make vegan)

1/4 Cup Unsweetened Apple Sauce

2 Tsp Pure Maple Syrup (or Raw Honey)

1 Tsp Vanilla

2 Tsp Cinnamon

Add to the dry ingredients and mix together. Heat waffle iron, spray with oil and cook according to the directions of your waffle maker.

Mix together Cinnamon and Coconut Sugar on a plate. Place warm waffle in the mixture and coat on both sides.

Ice Cream Taco

Scoop frozen ice cream into waffle and fold in half. Optional topping: melted chocolate chips (like Enjoy Life or Lily’s) fresh whipped cream or coconut cream, pomegranate seeds, cinnamon/coconut sugar mixture.
